Sopapilla Dough

1 cup AP flour • 1 cup red masa flour • 1 tsp baking powder • 1/2 tsp salt

• 3 tbsp unsalted butter • 1 cup warm water • red food coloring

1. Combine Masa flour, AP flour, baking powder, red food coloring, and salt in mixer

2. Add butter chunks slowly 

3. Add water to form ball, (don’t over mix/ combine with hands if need to) then, cover and chill for 20 mins

4. Heat Veg oil to 375 degrees

5. Roll out dough on a lightly floured surface and cut to desired shaped

6. Fry @ 350 degrees F

3 large egg whites • 1 cup granulated sugar • 1 tsp vanilla extract • Salt to taste • 170g of cold butter cut up • 1 TBSP honey • ¼ cup of chopped almonds

Swiss Honey (Almond) Buttercreme

1. Heat up/boil water halfway in small saucepan

2. Separate egg whites & yolk

3. Add egg whites and sugar to the Kitchen Aid metal bowl and whisk

4. Once combined, put over the hot saucepan and whisk until the sugar has all melted and it turns white

5. After egg whites and sugar have melted together, put the bowl in Kitchen Aid to whip till you get stiff peaks (15-20 mins) with the whisk attachment (Might need to put into fridge on and off) & Add vanilla & salt

6. While chilling, chop up almonds into small pieces 

7. After 20 mins, put the bowl back to Kitchen Aid and start whipping again, cut up the butter into 1 TBSP cubes and then add one cube slowly till incorporated

8. Once all incorporated, fold in the honey

8 strips of bacon • cayenne to taste

Chopped Bacon

1. Preheat oven to 350 degrees

2. Line sheet tray with parchment and lay out the bacon

3. Bake bacon for 25 - 30 mins (til super crispy)

4. Once baked, remove from the sheet tray and blot off the grease

5. Small chop into tiny tiny pieces

6. Mix with a little bit of cayenne

1 cup granulated sugar • .375 cup water • ⅓ cup light corn syrup

• Sweet peppers • 1/2 tsp Lemon extract • 1 lemon juiced • 1/2 orange juiced • 1-2 tsp of coriander • 1-2 tsp of nutmeg • 1-2 tsp of cinnamon • Salt to taste​

Sweet Pepper Tuile

1. Preheat oven to 300 degrees F

2. Mince sweet peppers (tiny cubes) set aside

3. In a medium saucepan, add sugar, corn syrup, water, lemon extract, lemon juice, orange juice, and all spices

4. Get a sheet tray lined with parchment ready with a large offset 

5. Heat and bring to a boil to 300 degrees F. Whisking constantly with a thermometer in 

6. Once the temperature hits 300 degrees F, pour right onto a sheet tray and spread out quickly

7. Let cool and break into chunks and put into the blender (a little bit at a time)

8. Blend to make into powder, & Sift the powder onto a sheet tray

9. Put into oven for 5 minutes

10. Meanwhile, pat down the minced sweet peppers to dry

11. Pull out of the oven and sprinkle minced sweet peppers all over

12. Form into tubes with/ metal dowel/a steel (fold the tuile inside out so sweet peppers show) 

13. Let Cool

Lemon Gel

160g lemon juice (4-5 lemons) • 80g water • 20g honey • 80g sugar

• 6g gellan powder • LOTS of Red gel food coloring

1. Pour lemon juice in saucepan and add the water, honey, sugar, red food coloring, & gellan powder

2. Mix and bring to boil for 1 min

3. Once boiled, transfer into a bowl & let cool in the fridge

4. Once cooled, blend to get desired texture
